Fucking Up Swedish Almond Cake

Sometimes my baking skills are on point, and sometimes they are not. Today, they were not. As I tried to create the famous Swedish almond cake that I am so fond of, I failed miserably. There are only a few simple ingredients on the recipe and I somehow managed to fuck all of them up. Instead of a soft and fluffy cake I got a gooey and chewy cake. A couple of factors were to blame for this occurrence. 1. I am at 6,512 feet in elevation and decided not to use extra flour (a bad decision). 2. I used almond milk instead of whole milk and I guess that messed it up too. I will try again, and succeed next time!

Here's the recipe for all you brave people out there:

Beat well:

1 1/4 cup sugar

1 egg

1 1/2 tsp. almond extract

2/3 cups whole milk

Add:

1 1/4 cups flour

1/2 tsp. baking powder

1 stick margarine

Spray pan with pam. Bake at 350 for 40-50 minutes.
