Chocolate Cinnamon Cake with Caramelized Banana

For this recipe I tried something completely new and different. I had never made this cake before and actually created most of this recipe myself! I used a recipe for wacky cake (this recipe was very popular in the great depression because it uses very simple ingredients) but I added a few things. For the topping though, it was an experiment and I am very happy to say that it all turned out and tastes pretty good if I do say so myself! The cake part is chocolatey and cinnamony while the topping is sweet and has a banana flavor. First off, preheat your ovens to 350 degrees!

For the topping:

Get a greased 9X13 pan ready because once this mixture has caramelized, you will need to transport it immediately from the sauce pan to the cake pan!

1. Get a medium sauce pan and place over medium heat. Then, place a stick of butter in the pan to melt it. The butter might start to brown which is okay, just make sure it doesn't burn!

2. After it has melted, put a cup of brown sugar in the pan and mix together.

3. When the mixture starts to bubble, add two sliced bananas to it! Let it caramelize for about five minutes or until bananas turn golden brown. Here's what it should look like:

4. Then pour the mixture into the 9X13 pan, spreading it evenly.

Now it's time for the cake! Get a large mixing bowl because it's a pretty big recipe!

Stir Together:

3 Cups Flour

2 Cups Sugar

2 Teaspoons Baking Soda

6 Tablespoons Cocoa

2 Teaspoons Vanilla

2 Tablespoons Vinegar

10 Tablespoons Melted Butter

2 Cups Cold Water

1 1/2 Cups Semi-Sweet Chocolate Chips

2 Tablespoons Ground Cinnamon

Topping:

2 Sliced Bananas

1 Cup Brown Sugar

1 Stick Butter

Once you have mixed that together, pour over the caramelized bananas and place in oven for 30 minutes. For serving this, turn over the cake so the banana part is on the top. I also suggest serving this with vanilla ice cream. Enjoy!!
