Super Simple Toffee

I absolutely love toffee, but it tends to be a little more expensive and it's pretty hard to make. So when I discovered that my mom had an old recipe for simple toffee, I got really excited and made it. Even though the consistency of the home made toffee is not the same as candy toffee, the flavors are very similar! So if you're a toffee lover like me then you'll LOVE this recipe!
First things first though, preheat your ovens to 400!

The first step is to line a metal 9X13 inch pan with tin foil and spray with Pam. Place the saltine crackers in rows, filling the pan.
Then, boil the brown sugar and butter in a sauce pan on medium heat for 3 minutes or until mixture comes to a rolling boil. Speaking from personal experience, watch this mixture very closely! It can burn very easily!

Next, take the mixture and pour it onto the crackers. The crackers might start to swim a little, which is okay! Then, place the pan in the oven at 400 for eight minutes, or until the mix starts to bubble again. Also watch this process very carefully because this step is also prone to burning.

Here is an example of what the mix looks like when you should take it out of the oven! Let the pan cool for about 30 seconds then pour the bag of chocolate chips on to the crackers. If you leave the chocolate chips for about a minute then they will start to melt and it will be easier to spread the chocolate. I used a small rubber spatula to help spread the chocolate!

After you spread the chocolate chips you can sprinkle chopped almonds or pecans on to it. I chose not to use nuts this time, but usually I use pecans.
All that's left to do now is put the toffee in the fridge for 4-5 hours. Break apart, and enjoy!

Recipe:
1 Sleeve Saltine Crackers
1 Cup Butter
1 Cup Brown Sugar
12 oz. Bag Semisweet Chocolate Chips
